Easy Bake: Chocolate Chip Cookies
If you’ve always wanted to try your hand at baking, chocolate chip cookies are the perfect introduction.
Cookies are my husband’s favorite sweet treat, and I totally use that to my full-advantage. Anytime he passes by the kitchen and sees the ingredients on the counter, he knows that
- A)- I know he’s upset with me about something and I’m trying to get on his good side, or
- B)- I need a project done around the house.
Today’s cookies were definitely a “B” batch.
Jump to RecipeI searched all over the internet for a simple-but-yummy chocolate chip cookie recipe, and they just seemed to fall short somewhere along the line; either I didn’t like the taste, or the instructions were too complicated. After a bit of trial-and-error, I found my two favs, combined them, and made some minor adjustments to the overall recipe to get my desired taste.
And in the-devil-is-a-hater fashion, just as I was getting ready to mix my wet and dry ingredients together, my hand mixer completely conked out. Really?? The one day that I decide to photograph the process and write about it? As frustrated as I was, I reminded myself that I did have the mixer for over 10 years, and in 10+ years it did withstand the test of time (until it didn’t).
I was making these cookies especially for the hubs…and let’s face it- the garage shelves that I need built aren’t going to build themselves (“B. Batch”-stick with me people).
So we made a quick trip to my neighborhood store and picked up a new hand mixer. Meet my new bae:
I was desperate and probably would have bought whatever they had, but to my surprise it’s actually a really good mixer, and an excellent price point at that. If you want more details about it, click HERE.
I ended up baking half the batch and freezing the other half.
Easy Bake Chocolate Chip Cookies
Equipment
- Hand Mixer
- Medium-sized mixing bowl
Ingredients
- 3 cups All-purpose flour
- 1 tsp Baking soda
- 1 tsp Sea salt (fine)
- 2 large Eggs
- 2 sticks Unsalted butter (room temperature)
- 1 1/4 cups Light brown sugar
- 1/2 cup Granulated sugar
- 2 tsp Vanilla extract
- 1 1/2 cups Semi-sweet chocolate chips
Instructions
- Combine the flour, salt and baking soda.
- Using an electric mixer, beat the butter, brown sugar and granulated sugar in a separate bowl until mixture is creamy (approx. 2 min.).
- Add the vanilla and eggs to the sugar and butter mixture, then gradually beat in the flour mixture.
- Stir in the chocolate chips.
- For the best results, wrap the dough in plastic and refrigerate for 24 hours.
- When ready to bake, let the dough sit at room temperature until it's soft enough to scoop.
- Preheat the oven to 350 degrees. While the oven is preheating, line your baking pan with parchment paper.
- Divide the dough into 1-tablespoon sized scoops and place on lined baking pan.
- Bake for 12-15 minutes or until golden brown. My desired cookie has a crispy, golden brown edge with a gooey center.
- Let cool for 5 minutes before serving.
If you are a sweets lover, you definitely need to try this recipe. It’s super easy, and although there’s overnight prep work involved, it’s well worth the wait. Trust me.
