As the aroma of freshly baked Blueberry Lemon Loaf fills my kitchen, I’m reminded of the simple joys of summer – lazy mornings, sun-kissed afternoons, and the company of loved ones. With each slice, I’m transported back to moments spent picking ripe blueberries under the warm sun and relishing the tangy sweetness of freshly squeezed lemons.

Blueberry Lemon Loaf
Ingredients
- 1/2 cup granulated sugar
- 1/2 cup melted butter
- 2 lemons
- 1 lemon zest
- 1 1/2 cups all-purpose flour
- 2 tsps baking powder
- 1/2 tsp salt
- 2 large eggs
- 1 tbsp vanilla extract
- 1/4 cup fresh lemon juice
- 1/4 cup whole milk
- 1 1/2 cups fresh blueberries
- 1/2 cup sour cream
- 1 cup powdered sugar
Instructions
- Preheat oven to 350 degrees F
- Line a 9×5 inch loaf pan with parchment paper.
- In a large bowl, whisk together sugar and lemon zest.
- Add in melted butter until well combined.
- Add in eggs and vanilla and mix until consistency is smooth.
- Stir in milk, sour cream and the juice of 1 lemon.
- Fold in baking powder, flower and salt until combined.
- Fold in blueberries gently.
- Pour the batter into the lined baking pan and bake for 45 to 55 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in pan for 15 minutes, then transfer to a wire rack to cool completely.
- In a small bowl, whisk together the juice of 1 lemon with powdered sugar to make the glaze.
- Slice and enjoy!
